Probably you are familiar with the Chinese saying, Firewood, rice, oil, salt, sauce, vinegar, and tea are the seven necessities to begin a day. Though tea is last on the list, we can still see how important the tea is for the Chinese. Tea becomes one of indispensable things in the Chinese daily life for a long history.

There are actually thousand of Chinese tea varieties. These are usually classified into five types according to the different methods by which it is processed. Here tea is classified by the method of processing. Now, let us take a look at these classes one by one.

Green Tea (“lu cha” in Chinese ) leaves still look naturally yellowish-green after they are processed, without fermentation. Well known green teas include Longjing Tea from the West Lake of Hangzhou, Biluochun Tea from Wu County, Suzhou, Maofeng Tea from Mt. Huangshan in Anhui, and Yinzhen Tea from the Hills of Junshan, Dongting Lake , Hunan Province and Yunwu Tea from Lushan Mountain.

Black Tea is called Hong Cha in Chinese and knowned ad Chinese red tea. It is fermented before baking. The most famous black teas include Qi Hong Tea from Qimen, Anhui Province , Dian Hong Tea from Yunnan, and Ying Hong Tea from Yingde, Guangdong.

Wulong Tea, also known as Oolong Chinese tea, Oolong tea possesses the freshness of green tea and the fragrance of black tea. This is being made after partial fermentation. The three major oolong growth areas are Fujian, Guangdong, and Taiwan. Tieguanyin has become the representative of oolong tea although the most precious is Dahongpao (Big red robe), which was once used as a tribute.

Scented Tea : This kind of Chinese tea is known as scented tea because it is made by mixing fragrant flowers in the tea leaves in the course of processing. The flowers include jasmine, orchid, plum, gardenia, rose, and sweet-scented osmanthus with jasmine being the most popular. Fuzhou in Fujian Province and Suzhou in Jiangsu Province have long been famous for jasmine tea.

Compressed Tea : Tea compressed into the shape of brick is called brick tea. It is very popular among the Tibetan, Mongolian and Uigur where are ethnic minorities living in the border areas of the country. The most well-known is Pu erh Tea from Yunnan province.
